10-Minute Tex-Mex Tortilla Pizza



Now this is my kinda fast food. A crisp tortilla topped with salsa verde, black beans, melted pepper jack, sweet red onions and some smoky spices! So much flavor and so few calories compared with your standard slice of pie.

Another brilliant recipe passed onto me by my sister. Gotta give it to her, she knows her stuff when it comes to Mexican food! 

It is my new, go-to savoy snack. It satisfies my craving for Mexican food and pizza in one fell swoop. Does it get any better? I cannot wait to serve it up at girls’ wine night. Not to mention, it makes a great dinner or lunch when paired with a salad. Enjoy!!

What to love about this meal (beside how delicious, cheap and fast it is!):

  • Protein and cholesterol-lowering fiber from the beans help regulate blood sugar, keep you full and build strong muscles!

Tex-Mex Tortilla Pizza

Ingredients:

6-8 large flour tortillas (if you want, go gluten free)
½ cup salsa verde (really any kind would work)
15 oz can black beans (washed, drained)
11/2 cups grated pepper jack (or cheese of choice)
Sprinkle of chili powder, cumin, cayenne pepper
Garnish: 
1 medium red onion, diced
Cilantro, chopped
1-2 avocado, pitted and sliced
1-2 limes

Directions:

  1. Preheat oven to 400F/200C. While oven is heating, use a fork to poke holes into the tortillas so they don't bubble up when baked.
  2. Although the oven is not up to the right temp yet, palce as many tortillas as fit directly on the oven racks. (I do four at a time with two on each rack). Bake until they become slightly crisp, but not brown (roughly 3-5 minutes).
  3. While tortillas are baking, prep other ingredients (dice onion, grate cheese and wash and drain beans).
  4. Spoon about 1 T. of salsa onto each tortilla. Top with 1/4 cup to 1/3 cup of beans. Sprinkle cheese and spices over cheese*. Bake 5 minutes. 
  5. Garnish with red onion, cilantro and avocado slices. Serve with lime slices and hot sauce!

*If you want add the onion before you bake the pizzas to make them sweeter!
        Goes great with beer, white wines and salads.
